    MANDARIN BLUEBERRY MUFFINS

    1 3/4 cups Whole wheat flour
    3/4 cup Oat bran
    1/3 cup Granulated sugar
    1 tablespoon Baking powder
    11 ounces Mandarin oranges in light sy --
    2 Egg whites
    1 teaspoon Vanilla extract -- or almond e
    1/2 cup Blueberries -- plus
    2 tablespoons Blueberries -- fresh or frozen

    Preheat oven to 350 degrees; coat muffin cups with nonstick cooking spray. Combine the flour, oat bran, sugar and baking powder; stir to mix well. Crush the orange segments slightly and add the oranges and their syrup, the egg whites and vanilla extract to the flour mixture; stir just until the dry ingredients are moistened. Fold in the blueberries. Fill the muffin cups 3/4 full with the batter. Bake for 15 to 18 minutes, or just until a toothpick inserted in the center comes out clean. Remove the muffin tin from the oven and allow it to sit for 5 minutes before removing the muffins. Serve warm or at room temperature.
