    Plum Muffins

    Recipe Introduction

    Brioche pan or regular muffin pan. Bake 20 minutes.

    List of Ingredients

    1 cup pastry flour
    1 cup unbleached flour
    1 teaspoon baking powder
    1 teaspoon cinnamon
    1 egg (extra large)
    1/3 cup canola oil
    1/3 cup orange juice
    2 teaspoons pure vanilla extract
    1/3 cup brown sugar
    4 ripe plums, mashed with juice





    Recipe

    Heat oven to 325 degrees. Sift together the first 4 ingredients. Make a well in the center of flour and blend in the egg, oil, orange juice, vanilla extract, brown sugar, and plums. Add more orange juice if needed. (Do not over mix) Place batter in a greased Brioche pan or regular muffin pan. Bake 20 minutes.
