    Vanilla Muffins With French Vanilla Frosting

    Vanilla Muffins

    1 3/4 cup self-rising flour
    1/2 cup sugar
    1 large egg, beaten
    8 oz. container vanilla yogurt
    1 Tbsp. vanilla extract
    6 Tbsp. butter, melted
    1 can Duncan Hines ready to spread French Vanilla frosting

    Preheat oven to 400°F. Coat muffin tins with cooking spray or use cupcake
    liners--I use the liners

    In a large bowl, stir together flour and sugar. In a medium bowl,
    stir together egg, yogurt and vanilla; pour over dry ingredients. Add
    melted butter and stir just to blend. Do not over mix. Quickly spoon
    batter into muffin cups, filling each muffin cup to the top. Sprinkle
    with cinnamon-sugar, if desired.

    Bake muffins about 20 minutes, or until a toothpick inserted in
    center comes out clean. Remove muffins to wire rack to cool. Top each one
    with frosting
