    Country-Style Turkey Sausage from David

    1 Tablespoon vegetable oil
    1/2 cup chopped onion
    1 teaspoon minced garlic
    1 teaspoon rubbed sage
    1 teaspoon dried thyme
    1 teaspoon dried oregano
    1 Tablespoon chopped parsley
    1 Tablespoon chopped fresh basil (optional)
    1 teaspoon salt
    1 teaspoon black pepper
    2 lbs. coarsely ground turkey, preferably light and dark meat
    Nonstick cooking spray

    Recipe



    1. Heat the vegetable oil in a skillet over medium heat until hot. Add
    the onion and cook for 2 minutes.
    2. Add the garlic and sauté for 1 minute. Add the sage, thyme, oregano,
    and parsley and cook until the onions are translucent, about another 2
    minutes. Let cool.
    3. In a large bowl, combine the cooled onion mixture, basil (if
    desired), salt, pepper, and turkey. Stir until completely combined.
    4. Shape the meat mixture into eighteen 2-inch round patties.
    5. Coat a skillet with nonstick cooking spray and heat over medium heat
    until hot. Cook the sausage patties in batches until nicely browned, about 3
    minutes on each side.
    6. Drain on paper towels and keep warm in a 200-degree F oven until
    ready to serve.

    (Making sausages a day ahead of time enhances their flavor.)
