    Healthy Power Pancakes

    4 fresh California nectarines, divided
    2 cups reduced fat all purpose baking mix
    1 1/2 cups apple juice
    1 lightly beaten egg
    nonstick cooking spray


    Recipe



    1 Chop about 1 nectarine to make 1 cup. Slice remaining nectarines and set aside.

    2 In medium bowl, combine baking mix, juice and egg until just moistened. Stir in
    fruit.

    3 Heat griddle or skillet over heat; coat with cooking spray. Spoon 1/2 cup batter
    onto griddle; spread out mixture slightly with back of spoon. Cook until small bubbles
    form on top and underside is golden brown. Turn pancakes and cook until brown.

    4 Place pancakes on plate and top with nectarine slices.


    Servings: 6
