    1 small onion, diced
    1-1/2 tablespoons shortening (or olive oil)
    3 cups diced cooked potatoes
    1/2 teaspoon salt
    1/8 teaspoon pepper
    4 eggs
    2 tablespoons milk
    8 slices bacon, cooked and crumbled

    Recipe



    In a skillet, cook onion in fat until browned. Stir in potatoes, salt and pepper; cover and cook 5 minutes. Stir together eggs and milk. Pour egg mixture over potatoes, spreading evenly. Cover and cook til eggs are set, about 10 minutes. Sprinkle crisp bacon over top. Cut in wedges to serve.

    Makes 4 servings

    Note: I like adding some chopped green peppers and mushrooms to this....makes a filling brunch dish.
