    Roast Chicken Hash

    2 Cups Roasted Chicken Meat Chopped- Skin Removed
    1 Large Baking Potato-Baked. Skin Removed and Chopped
    2 Green Onion- Chopped
    2 TBS. Vegetable Oil
    4 Eggs-Poached
    To taste Salt & Pepper
    2 Tomatoes- Sliced for Garnish
    3 TBS vinegar

    Recipe



    Mix chopped chicken, potatoes and green onions. Season with salt and pepper. Form 4 patties, 6oz. each. In sautée pan or on a griddle, cook for 3 minutes on each side until nice and brown.

    Place on serving dish and top with poached egg and garnish with sliced tomato.

    Poaching Egg

    In a frying pan bring water, vinegar and salt to a boil. Reduce the heat to a bare simmer. Break egg into a small bowl and gently slip it into water. Poached to desired consistency.
