    Cheesy Chicken Rice and Broccoli

    I cup rice, cooked
    1 bunch broccoli, cooked, seperated
    1 can cream of chicken soup
    1/2 soup can of milk
    8 oz. Velveeta, cubed
    1 T. butter
    1 T. chopped onion
    2 chicken breasts

    Recipe



    Brown chicken breasts in butter. Remove; add onion and wilt
    slightly.
    Add soup, milk and Velveeta, stirring with a whisk until smooth
    and well
    blended. Spray a casseole dish. Fold broccoli gently into rice.
    Place in
    casserole. Top with chicken breasts. Pour sauce over all and
    cover
    tightly. Bake at 350 for 45-60 min. until chicken is done and
    sauce has
    bubbled through the the rice and broccoli for a wonderful taste.
    A
    salad and warm bread makes a complete meal. 2 servings.
    Can be multplied for servings needed. Freezes well.
