Chicken Saltimbocca

•1 oz. olive oil
•6-8 oz. chicken breast
•3 oz. prosciutto (paper thin)
•3 oz. whole milk mozzarella
•seasoned flour
•2 tbl butter
•1 oz. minced shallots
•1 oz. minced garlic
•2 oz. white wine
•2 oz. demi glaze
•Fresh sage
•2 oz. chopped Roma Tomato
•Cooked linguine (al-dente)
Dredge chicken breast in seasoned flour. Saute chicken in olive oil and top with prosciutto, sage leaf, and mozzarella (set aside)
Saute shallots,garlic and chopped sage in butter until translucent brown
De-glaze pan with white wine and then add the demi-glaze and reduce adding the chopped tomatoes last.
Toss with linguine and top with finished Chicken Saltimbocca
