SKILLET LASAGNE (Tuesday)
Makes 5 servings
Preparation time: 15 minutes
Cooking time: about 15 minutes, plus pasta
6 ounces campanella or other small pasta
12 ounces Italian sausage links, casings removed
2 (14 1/2-ounce) cans diced tomatoes with basil, garlic and oregano
1 (6-ounce) can no-salt-added or regular tomato paste
1 cup part-skim shredded mozzarella cheese
Cook pasta according to directions; drain. In a large nonstick skillet, cook sausage 5 minutes or until no longer pink; drain if necessary. Stir in tomatoes and tomato paste. Simmer 5 minutes. Remove from pan; keep warm. Place half the cooked pasta in bottom of skillet. Pour half the tomato-meat mixture over pasta. Sprinkle with half the cheese; repeat layers. Cover and cook on medium 4 minutes or until heated through and cheese melts. Remove from heat; let stand 1 minute and serve.
