    Turkey Casserole with Veggies

    List of Ingredients




    2 c. cooked turkey, diced

    3 Tbsp. butter

    1/2 c. celery, diced

    1/3 c. green pepper, thin sliced

    1/3 c. onion, thinly sliced

    3 Tbsp. flour

    1 1/2 c. turkey stock

    2 egg yolks, slightly beaten

    salt and pepper to taste

    3 Tbsp. dry white wine

    Recipe



    Melt butter in saute` pan, stir in celery, onion, green

    peppers and slowly

    cook until lightly browned. Add flour, and

    simmer for 5 minutes. Stir in stock gradually. Remove pot

    from heat and

    stir egg yolks and turkey meat. Simmer

    over low heat long enough for the sauce to thicken

    slightly. Add wine, salt

    and pepper to taste. Place in a serving

    dish and top with minced chives or parsley, nuts or grated

    cheese. Serve with rice.
