Creamy Pineapple Dessert
1 20-ounce can crushed pineapple with juice
1 3.4-ounce (4-serving size) instant coconut cream pie filling mix
12 ounces cottage cheese (1-1/2 cups)
1 cup frozen whipped topping, thawed
1/4 cup toasted coconut
1/4 cup chopped cashews
Fresh raspberries or blueberries for garnish

In large bowl, place pineapple; sprinkle with pudding mix; add cottage cheese. Blend well. Fold in whipped topping. Place in individual dessert dishes, if desired, or serve in lettuce-lined bowl. Before serving top with toasted coconut and chopped cashews. (To toast coconut, bake at 375 degrees for 5 minutes or microwave on medium 4-1/2 to 8 minutes. Watch closely as it burns easily.) Garnish with fresh berries. Makes 12 small to medium servings.
