    Ingredients:
    6 peaches, cut in half and pit removed
    3/4 cup cold whipping cream
    4 oz pack of fresh goat cheese (chevre)
    Zest from one lemon (about 4 Tsp)
    1/3 cup sugar
    1/2 cup Slide Ridge Honey Wine Vinegar*

    Over low heat, add the honey wine vinegar to a small saucepan, and reduce by 3/4ths.
    While the vinegar is reducing, add whipping cream to a clean bowl, and whip to hard peaks.
    In a food processor combine goat cheese, sugar, and lemon zest with 1/4th of the whipped cream. Process until pureed.
    Fold the goat cheese mixture into the whipped cream
    Set aside in the fridge.
    15 minutes before serving, place peaches cut side down on a lightly oiled BBQ grill set on low. Cook just until brown grill marks form (about 8-10 minutes)
    To serve put two peaches on a plate, top with a dollop of whipped goat cheese, and drizzle honey wine vinegar reduction. Note: If the reduction is too thick to drizzle, put the pan back over low heat for a couple of minutes and it the sauce will thin enough to drizzle.

    *If honey wine vinegar is impossible to find, try using champagne vinegar, or a nice balsamic vinegar.
