    Healthy Black Bean and Salmon Appetizer

    List of Ingredients

    - 8 corn tortillas
    - 1 (16 ounce) can black beans, rinsed and drained
    - 1 (7 ounce) can pink salmon with bones, drained
    - 2 tablespoons safflower oil
    - 1/4 cup fresh lime juice
    - 1/4 cup chopped fresh parsley
    - 1/2 teaspoon onion powder
    - 1/2 teaspoon celery salt
    - 3/4 teaspoon ground cumin
    - 3/4 teaspoon minced garlic
    - 1/2 teaspoon grated lime zest
    - 1/4 teaspoon dried red pepper flakes
    - 1/4 teaspoon chili pepper



    Recipe

    Preheat oven to 350 degrees F. Cut tortillas in
    triangles and toast in oven until crisp, about 5
    minutes. Combine the beans and salmon, flaking the
    salmon with a fork. Mix in remaining ingredients;
    chill to blend flavors. Serve with tortilla chips.

    Servings: 19 (2-tablespoon each)
    Note: This may be served on a bed of lettuce as a first course for 4 people.
