    Lemon Zucchini-Squash Saute

    Diabetic Lemon Zucchini-Squash Saute

    1 T olive oil
    2 med zucchini, 2 cups
    2 yellow squash, 2 cups
    1 clv garlic, minced
    1/2 t dried oregano
    1/2 t pepper
    1/4 t salt
    1 T lemon juice
    1 t grated lemon zest


    Recipe

    Cut zucchini and squash lengthwise and then into 1/4 inch slices.
    In large nonstick skillet heat oil over medium-high heat. Add
    next 6 ingredients and cook about 6 minutes or until tender,
    stirring occasionally. Stir in juice and zest, remove from heat.
    Makes 6 servings.

    Nutritional information: 48 calories, 2 g fat, 2 g protein,
    6 g carbohydrates, no cholesterol, 181 mg sodium, 2 g fiber.
