1 prepared pie crust
Filling
1 can pumpkin puree (15 oz)
3/4 c Splenda
2 T corn starch
1/2 t ground cinnamon
1 1/2 t pumpkin pie spice
1/8 t salt
1/2 c fat free half & half
1/2 c egg substitute
3 T heavy cream
1 T vanilla extract
Recipe
Preheat oven to 400 degrees F. Blend pumpkin puree, Splenda,
cornstarch, spices, and salt in a medium sized mixing bowl.
Mix until all ingredients are well blended. Add remaining
ingredients and mix well. Pour into prepared piecrust. Bake
35-40 minutes or until set in the center and the crust is
golden brown. Makes 8 servings.
