    Low Fat Fruit Cocktail Cake

    1 can fruit cocktail (16 oz)
    1 1/2 c flour
    1 c sugar
    1 beaten egg
    1/2 t baking soda
    1/2 t salt
    2 T canola or corn oil

    Recipe



    Grease a two quart glass casserole dish. In a medium bowl, mix
    the entire can fruit cocktail (including juice or syrup), flour,
    sugar, salt, soda, oil, and egg. Pour the mix into the
    casserole. Bake at 350 for 30-40 minutes. Makes 12 servings.

    Nutritional information: 147 calories, 3 g fat, 2 g protein,
    29 g carbohydrates, 16 mg cholesterol, 154 mg sodium, 2 g fiber.
