    4 crepes (pre-packaged)*
    8 oz lean ham
    6 stalk asparagus
    1/2 c crushed pineapple
    1/2 c Colby/Jack cheese (finely shredded)

    Recipe



    Preheat oven to 350 degrees. Cut asparagus stalks in half and
    steam them until tender. Heat crepes per directions on package
    (30 seconds to 1 minute). Place 2 ounces of lean ham on the
    crepe. Put 3 of the steamed asparagus stalks on top of the ham.
    Top with 2 tablespoons of crushed pineapple (Make sure you have
    squeezed all the juice out). Top with 2 tablespoons of cheese.
    Roll. Spray baking dish with non-stick spray. Place rolled
    crepes in the dish. Once all the crepes are rolled, put them in
    the oven until the cheese has melted, approximately 3-5 minutes.
    Serving size is 2 crepes. Makes 2 servings.

    *Can use a low fat flour tortilla.

    Nutritional information: 210 calories, 7 g fat, 50 mg
    cholesterol, 820 mg sodium, 1 g fiber.
