    Lamb Chops with Mint

    INGREDIENTS
    3 (5 oz.) Lamb Chops
    ¼ tsp. Salt
    ¼ tsp. Ground Black Pepper
    1 Tbsp. Mint, Julienned
    1 Tbsp. Veal Butter
    Fresh Chopped Parsley

    TO COOK
    1. sprinkle both sides of lamb with salt and pepper over all 3 chops.
    2. Place in broiler and broil to choice of doneness.
    NOTE: Medium Well and Well Done bones should be wrapped with foil.
    TO PLATE
    2. Measure out julienne mint and sprinkle over the Plate
    3. Place cooked chops platter with eyes of the chops facing the same way
    and the bones crossing at the 12 o'clock position.
    4. drizzle butter over chops and let it run on platter.
    5. sprinkle parsley over the surface,
    .6. Serve immediately.
