    Santa Fe Chili and Southwestern Nachos

    1lb Ground Sirloin
    1/2 cup chopped onion
    1/2 cup chopped green pepper
    1/4 cup chopped celery
    1 can Rotel tomatoes
    1 can white corn
    2 cans black beans
    1 can tomato paste
    2 Tbl chili powder
    1 Tbl cumin
    1 tsp smoked paprika
    1 Tbl black pepper
    1 Tbl salt
    Cavenders to taste
    Water as needed(approx. 2 cups)

    Instructions
    Santa Fe Chili
    Cook beef until done, add vegetables and continue to stir and cook.
    Add beans, corn tomatoes and paste. Add seasonings and water, simmer for 2 hours, stirring occasionally.
    Serve with cheese and sour cream.

    Southwestern Nachos
    Using the Santa Fe Chili, place chips on a plate, add chili, cheese and jalapenos microwave for one minute until cheese is just melted.
    Add salsa and sour cream to taste. Makes for an awesome tailgating experience!
