    Chicken Fried Rabbit Loin with Wild Mushroom Sauce


    Whole Rabbit or loin



    Flour as needed



    Egg 2



    Salt to taste



    Pepper to taste



    Oil enough to shallow fry product, probably 3 cups



    Trim rabbit if using loin, removing cartilage.



    Begin Standard Breading Procedure which is as follows:



    Plate of flour/ Bowl of beaten egg/ plate of flour seasoned with Salt and Pepper


    Dust loin on first plate



    Roll through egg and let all excess run off



    Cover with seasoned flour and shake additional flour from product



    Wash and clean mushrooms. Chop finely.

    Saute shallot in butter and deglaze with wine.


    Add mushrooms and cook until al dente.


    Finish with fresh herbs and a little cream and butter.


    Heat oil to 350F and lighly fry the rabiit until medium rare.
