    Chicken Scarpiello

    2 Boneless, Skinless Chicken Breast
    Flour to dust
    3 eggs, cracked and whipped
    Olive oil
    3 oz White Wine
    1/2 Lemon, squeezed
    3 Tbl Butter
    4 oz Chicken Stock
    1 oz Demi Glace
    4 oz Italian Sausage, cooked and sliced
    1 Sprig of Rosemary

    Trim all excess fat from chicken breast, pound out lightly, dust with the flour; add whipped eggs to chicken to coat. In a preheated sauté pan add 2 oz of olive oil, add chicken to pan ensuring to drain excess egg off of chicken, you just want to coat the chicken lightly. Cook on bottom side until chicken is golden brown. Turn chicken over and add the remaining ingredients. Cook down until the sauce coats the back of a spoon. Plate chicken and pour sauce over. Garnish with fresh rosemary and parsley.
