Creole Steak
2 tablespoons all-purpose flour
1 teaspoon creole seasoning
1 teaspoon paprika
1/2 teaspoon red pepper
4 eye of round steaks, 1/2 inch thick (one pound)
1 cup chopped onion
1/2 cup chopped green bell pepper
3 teaspoons butter, divided
1/2 cup uncooked rice
1 teaspoon salt
1/4 teaspoon red pepper
16 ounces stewed tomatoes
1 cup water
Recipe
1. Preheat oven to 350 degrees F.
2. Combine flour, Creole seasoning, paprika, and red pepper.
3. Pound each steak with a meat mallet.
4. Dredge steak in flour mixture.
5. In oven-proof skillet, cook onion and green bell pepper in one teaspoon of butter until tender; remove from skillet.
6. Brown meat in remaining two teaspoons of butter in same skillet; cover meat with onion mixture; sprinkle with rice.
7. Add salt and red pepper.
8. Spoon tomatoes over rice; mix remaining flour mixture with water. Blend well.
9. Pour water-flour mixture over meat mixture.
10. Cover and bake for 1 hour.
11. Let stand 15 minutes.
12. Spoon into serving platter. Garnish as desired.
