    1/2 lb. flank steak
    2 T. sugar
    3 T. soy sauce
    2 T. dry sherry
    1/4 tsp. finely chopped fresh ginger
    2 garlic cloves, minced
    2 T. oil
    3 T. peeled, sliced fresh ginger
    2 tsp. cornstarch
    3 T. water
    1 C. julienne-cut carrots, cooked
    Hot cooked rice

    Cut flank steak in half lengthwise. Slice each half crosswise into 1/4-inch thick slices.

    In small bowl, combine sugar, soy sauce, sherry, 1/4 teaspoon chopped ginger and garlic. Add meat to marinade. Let stand 15 minutes.

    In large skillet or wok, combine oil and 3 tablespoons sliced ginger. Cook over medium-high heat until ginger is lightly browned; remove ginger from skillet. Drain marinade from meat; reserve. Add meat to skillet; stir-fry 2 to 3 minutes or until meat is browned.

    Combine reserved marinade, cornstarch and water; add to meat mixture. Cook 2 to 3 minutes or until slightly thickened, stirring frequently. Add carrots; cook until thoroughly heated. Serve over hot cooked rice. Yield: 2 servings
