    Stuffed Frankfurters with Sauerkraut

    8 bacon slices
    1/4 cup finely chopped onion
    1 cup from a pkg of herb seasoned stuffing mix
    1/4 cup water
    2 tbsp prepared mustard
    8 frankfurters
    1 can (1lb. 11 oz.) sauerkraut
    1/4 cup sweet-pickle relish, drained
    1 tsp caraway seed

    Recipe




    1. Preheat oven to 400F.
    2. In large skillet, sauté bacon just until light golden. Drain on paper towel.
    3. Drain all but 2 tablespoons fat from skillet. In fat sauté onion until tender, about 5 minutes.
    4. In a small bowl, toss sautéed onion with stuffing mix. Add mustard and water; toss lightly to combine.
    5. Slit each Frankfurter from end to end, being careful no to cut all the way through.
    6. Fill each frankfurter with some stuffing. Wrap a slice of the bacon around each.
    7. Arrange frankfurters in a shallow 2 qt. baking dish. B 15 to 20 minutes, or until browned.
    8. Meanwhile, combine sauerkraut and relish in a medium saucepan; bring to boiling, stirring occasionally. Stir in caraway seeds,
    9. To serve, arrange franks over the sauerkraut in a serving dish.

    Makes 8 servings.
