Microwave Surfin' Tuna Casserole

3 eggs
3/4 cup milk
2 cups Stove Top stuffing, chicken flavor in the canister
1 1/2 cup shredded Colby/Monterey Jack Cheese
1 cup frozen peas, thawed
1 can tuna (6 1/8oz.) drained and flaked
1/2 cup cream of mushroom soup
1/4 cup chopped green onions
2 tablespoons pimiento, chopped
Recipe
Beat eggs in large bowl, add milk. Stir in stuffing mix, 1 cup of cheese, peas, tuna, soup, onions and
pimiento, mix well.
Spoon into greased microwavable pie plate. Cover loosely with wax paper.
Microwave on HIGH 5 minutes. Stir thoroughly to completely mix center and edges, smooth top.
Cover.
Microwave 5 minutes more or until center is no longer wet. Sprinkle with remaining 1/2 cup cheese,
cover let stand 5 minutes.
