    ORANGE PECAN SWEET POTATOES

    2 lb. sweet potatoes, pared
    and cut into 1/2-inch
    slices
    1/4 c. orange juice
    1/3 c. brown sugar
    1/4 tsp. nutmeg
    1/4 c. margarine
    1/4 c. chopped pecans

    Recipe



    Place potatoes and orange juice in 1 1/2-quart microwave
    casserole. Cover with plastic wrap. Microwave on High 6
    minutes. Stir in sugar, nutmeg and cinnamon; dot with butter.
    Microwave, covered, on High for 6 minutes, stirring once.
    Microwave, uncovered, 1 minute; stir. Sprinkle with pecans and
    microwave, uncovered, 1 minute.
