    Ingredients:

    1 c. Milk

    5 oz. Sugar

    1 c. Egg Yolks

    3/4 c. Heavy Cream

    1/2 T. Vanilla Extract

    1/2 ea. Vanilla Bean

    1 lb. Fresh Sweet Potato

    1 T. Cinammon

    2 t. Ginger

    Directions:

    1. Boil sweet potato whole in water for 45-1 hour.

    2. Run cold water over the sweet potato, and remove the skin.

    3. Chop the sweet potato and put to the side.

    4. Next in a small pot heat milk with the vanilla bean to a boil.

    5. Place yolks and sugar in medium bowl and add the hot milk slowly.

    6. Next add sweet potato to 1/2 of mixer in separate medium bowl.

    7. Use a hand blended and add cinnamon, ginger to the mix, blend for 2-3 minutes.

    8. Put sweet potato mix back into the other 1/2 of the mix, well mix.

    9. Next add heavy cream slowly and place into small or med ramekins.

    10. Place ramekins in a small warm water bath and place in oven.

    11. Bake on 275-F degree for 30-40 minutes.

    12. Let cool for about 1 hour before use.
