Grilled Cheddar, Apple and Bacon Panini Sandwiches
8 slices sourdough bread
4 tbs Dijon light mayonnaise
8 oz each Canadian bacon and sliced Cheddar cheese
1 Gala and/or Granny Smith apple, cored and thinly sliced
Place grill pan on stove over heat. Coat one side of each bread slice with melted butter or butter flavored cooking spray. Place 4 bread slices, sprayed side down on work surface. Spread each slice with creamy Dijon, top with 1/4 bacon, cheese and apples.
Top with remaining bread, sprayed side up. Place on grill pan, top with foil. Place a skillet on sandwiches, to weigh down. Cook 6 min. or until cheese melts and bread is toasted, turning once.
