Cola Braised Country Ribs

6 lbs of Pork Spare Ribs, trimmed of excess fat
2 cloves minced garlic
6 carrots, cut into 1" chunks
1 minced yellow onion
6 celery stalks, cut into 1" chunks
1 12 oz can Cola (not diet)
Enough chicken stock to cover the meat
1 Tbs minced fresh rosemary
4-6 Bay leaves
Salt to taste
Working in a large stock pot, or enameled dutch oven, sear the outside of the ribs until brown. You may need to do this in multiple batches.
Once the ribs are brown remove and set aside. Add garlic, onions, carrots and celery and cook until onions are translucent.
Add ribs back to the pan, as well as cola, rosemary, bay leaves, and enough chicken stock to just cover the meat.
Bake in a 325 degree oven for 2 1/2 to 3 hours.
Salt to taste
Variations: Try other sodas such as Lemon Lime, Root Beer, and Dr. Pepper. All are delicious!
