    Jerry's Mouthwatering Pork Chops

    List of Ingredients

    1 cup grated Parmesan cheese**
    2 eggs, ligtly beaten
    1 sleeve of saltine crackers, crushed
    1/4 cup olive oil, adding more only if needed
    6 boneless pork chops, about 1/2 in thick


    Recipe

    Preheat oven to 350 degrees.
    Dip pork in egg, dip in Parmesan cheese, dip again in egg and finally, dip in cracker crumgs.
    In a heavy skillet, heat olive oil. Add pork and cook until just brown on both sides. (They brown quickly, so watch carefully.)
    Remove from skillet and place in an ungreased baking dish. Bake for about 25 minutes.

    **Notes: Use the dry Parmesan cheese that you find in the pasta aisle at the grocery store and not the fresh that you grate yourself. Also, Jerry used a glass baking dish.
