    Old West Pork

    Prep: 10 min, Cook: 1:40.


    1 Tbs. vegetable oil
    6 boneless pork sirloin chops
    1 large onion, sliced thickly
    3 Tbs. chili powder
    1 green bell pepper, seeded and chopped
    1 cup long grain white rice, uncooked
    1 cup tomato sauce
    1-1/2 cups water


    Recipe



    Preheat oven to 350°F. Heat oil in a flame-proof casserole dish over medium
    high heat. Cook pork 2 minutes per side until browned. Remove from casserole
    and set aside. Cook onion slices 1 minute per side. Set aside. Add chili powder
    to casserole and cook 1 minute, stirring. Stir in remaining ingredients and
    salt and pepper to taste. Arrange pork over rice mixture. Place an onion slice
    over each pork chop. Cover and bake 45 minutes.
