Plum Glazed Pork Roast
3 shallots,peeled and halved
1 1/2 Tbs. Chopped rosemary
1 orange,zested and juiced
1 center cut pork loin roast [5 pds.]
1/2 cup plum jelly,like hero
Recipe
Heat oven to 425 F. In food processor,pulse shallots,rosemary,2Tbs. Orange juice and 1 Tbs. Zest 30 sec. Brush on pork. Place in roasting pan. Roast 15 min. More. Reduce heat to 350F. Roast 45 min.more. In bowl,combine jelly and 1 Tbs. Each orange juice and zest. Brush on meat. Roast 15 min.,or until thermometer inserted in roast,not touching bone reads 170F.
