Pork Chile Verde
* 2 tsp Canola oil
* 1 lb Diced pork tenderloin
* 3 Tbs Yellow corn meal
* 2 cups Chopped tomatillos (about 12 oz)
* 2 cups Chicken broth
* 1can Green chilies drained
* 1 diced Char grilled jalapeno
* ½ cup Sliced green onions
* ¼ cup Chopped fresh cilantro
* ¼ tsp Salt
* 4 Tbs Cotija cheese
* 4 Fresh hot tortillas
· Heat the oil in a skillet and add the pork and sauté for 5 minutes or until browned
· Add the corn meal and cook for 30-seconds, Stirring constantly
· Stir in tomatillos, broth, chilies and jalapeno. Bring to a simmer over medium low heat
· Cook for 8 minutes or until tomatillos are tender
· Stir in onions, cilantro and salt
· Serve and top with the Cotija cheese
