    Chicken Sausage Burgers With Peppers

    Here's Tony's recipe for Tailgate Style Chicken Sausage Burgers With Sweet Peppers, as featured on New York Live!

    List of Ingredients

    For the sausage:

    2 lbs coarsely ground chicken meat
    3 cloves garlic crushed into a paste with
    1/2 tsp salt
    2 tbsp fennel seeds
    2 tsp sweet or hot paprika
    1-1/2 tbsp kosher salt
    1 tbsp freshly ground black pepper
    2 tsp fresh thyme, finely chopped
    2 tbsp fresh parsley, finely chopped
    2 tbsp cornstarch
    2 egg whites
    olive oil for sauteing

    For the peppers:

    2 each red, yellow and green peppers, cut into julienne strips
    1 clove chopped garlic
    olive oil to saute
    salt and pepper to taste


    Recipe

    Preparation:

    For the sausage:

    Mix all ingredients well by hand or with a wooden spoon, except
    olive oil.
    Form into 6 oz patties.
    Saute in olive oil for about 3-4 minutes per side or until internal
    temperature reaches 165 degrees F.
    ** Patties can also be roasted in a 450 degree oven. Simply brush
    with olive oil and place on foil-lined cookie sheet and cook for
    approximately 7 minutes or until internal temperature reaches 165
    degrees F.

    For the peppers:

    Saute peppers on high heat until wilted and soft, about 3 minutes.
    Add salt and pepper to taste.
    Add garlic and cook for 30 seconds or more.
    Remove from pan and keep warm.

    Serve patties on crusty rolls, top with peppers and enjoy with your
    favorite beverage, such as a good beer from Brooklyn Brewery to
    cheer the Giants on!
