    CHICKEN SCALOPPINE


    INGREDIENTS : serves 4 QUANTITY MEASUREMENT
    Butter flavored oil 6 oz Total
    Mushrooms, sliced fresh 2oz Total
    Chicken, scaloppine 2 pcs Total
    Artichokes 2 oz Total
    Capers 12 ea Total
    Lemon Butter 3oz Total
    Capellini Pasta, precooked 6oz Total
    Parsley, as garnish 1 oz Total



    Salt and pepper To taste Total





    PROCEDURE:
    1. In a hot sauté pan add butter flavored oil, mushrooms, chicken, prosciutto, artichokes, and capers. Sauté until all are thoroughly heated.
    2. Dip pre cooked pasta in boiling salted water for 10 seconds and drain thoroughly.
    3. Place pasta on one side of serving dish.
    4. Place chicken on top of pasta, then pour sauce mixture on chicken, leaving a little for pasta.
    5. Place remaining sauce on pasta.
    6. Garnish using chopped parsley for that extra touch!
