    Clementine Chicken

    4 - 5 clementine oranges
    2 Tbsp. soy sauce
    1 Tbsp. rice vinegar or white wine vinegar
    1 tsp. sesame oil
    1 tsp. brown sugar
    1 tsp. grated fresh ginger
    or ¼ tsp. ground ginger
    ½ Tbsp. cornstarch
    2 Tbsp. vegetable oil
    2 garlic cloves, peeled & minced
    1/8 tsp. crushed red pepper flakes
    1 lb. boneless, skinless chicken tenders
    4 green onions, thinly sliced

    Peel 2 of the clementine oranges and divide into segments. Set aside. Peel the remaining oranges and squeeze the juice to make 1/3 cup. Add the soy sauce, vinegar, sesame oil, brown sugar, ginger and cornstarch to the orange juice. Stir to combine well. Set aside.

    Heat the oil in a large skillet or wok over medium-high heat. Add the minced garlic and crushed red pepper flakes to the hot oil. Stir fry for 30 seconds. Add the chicken and stir-fry for 4 - 5 minutes until chicken is no longer pink and is starting to brown. Stir the orange juice mixture and pour into the skillet with the chicken. Cook, stirring constantly, until sauce is thick and bubbly, about 1 minute.

    Remove from heat and stir in the clementine orange segments. Scatter the sliced green onions over the top and serve.
