    1 (3-lb.) fryer chicken, cut in pieces and seasoned

    1/4 cup cooking oil or salad oil

    2 medium onions, chopped

    1/2 cup chopped bell pepper

    1/2 cup chopped celery

    4 to 6 ozs. water

    1/2 cup chopped green onions

    1/3 cup chopped parsley

    Recipe



    Wash and season chicken. (See note in Making a Cajun Brown Gravy recipe.)
    Add cooking oil to a heavy pot, skillet or sauté pan. When oil is hot, add chicken pieces, skin side down. Let chicken brown and stick to bottom. If chicken is not sticking, increase heat forcing it to stick, but not burn. Brown well on all sides.
    Remove chicken to a platter, add onions, bell pepper and celery to the pot and sauté until tender.
    Add water, lower heat and with a heavy cooking spoon, unstick everything on the bottom of pot, thus making a brown gravy. Return chicken to pot, cover and simmer until done (about 1 hour). You may have to add a small amount of water while cooking to maintain the gravy.
    Turn off heat, and stir in green onions and parsley. Serve over cooked rice or mashed potatoes.
    Serves 6.
