    4 skinless, boneless chicken breasts (pounded thin)

    1 pkg. fresh spinach (cooked, drained, and chopped)

    2 carrots, cut into match stick-size pieces

    garlic paste

    1/2 cup flour

    2 teaspoon olive oil

    1/4 cup mozzarella

    Recipe



    Rub each chicken breast with garlic paste on one side. Heat large skillet with 1 teaspoon of olive oil. Dredge chicken in flour and sauté until chicken is golden brown on both sides. Add salt and pepper to taste. Place chicken on baking dish and bake for 20-25 minutes at 350 degrees. Sauté carrots in 1 teaspoon of olive oil until crispy brown. Set aside. Remove chicken from oven. Place a portion of spinach on each chicken breast, then a little carrots on top, then a little mozzarella cheese on top. Return to oven until cheese is melted
