    Stuffed Chicken Breasts

    6 skinless, boneless, chicken breasts

    ¾ cup mayonnaise

    ¾ cup crumbled feta cheese

    3 cloves garlic, chopped

    1/8 teaspoon nutmeg

    ½ teaspoon salt

    1 (10 ounce) package of frozen chopped spinach, thawed and drained

    6 bacon slices

    DIRECTIONS:

    1. In a bowl mix mayonnaise, spinach, feta, garlic, nutmeg, and salt. Set aside.

    2. Cafefully butterfly the chicken breast, making sure not to cut all the way through. Spoon the spinach mixture into the chicken breasts. Wrap each breast with a piece of bacon, and secure with a toothpick. Place in a shallow baking dish. Cover.

    3. Bake at 375 degrees for 1 hour, or until the chicken is no longer pink.

    4. The stuffed breasts can be served over rice or pasta. Pour the juices from the cooking process over the dish for a gravy effect.
