    Nachos For a Crowd

    * 2 lbs. Ground meat
    * 2 Package taco seasoning
    * 1 Large onion-chopped
    * 1 Large Green Pepper-chopped
    * 2 Jars Tostitos Salsa Con Queso (Cheese Sauce) I prefer this brand, but you can use any brand of cheese sauce.
    * 2 Cans of Refried beans
    * 1 Can of Black Olives (optional)
    * 1 Can of Jalapenos (optional)
    * 1 Tomato Chopped
    * Shredded lettuce
    * 1 bag of tortilla chips (any style you prefer)

    Brown ground meat, drain and add taco seasoning according to directions. Spread in the bottom of a 9X13 ungreased pan. Spoon the refried beans on top of the beef. Spread the chopped green peppers and the onions on top of the beans. If you are using the Jalapenos, put the on top of the green peppers and onions. Spread the Cheese on top of the green peppers and onions. Bake in a 350 degree oven for about 30 minutes.

    Place tortilla chips on a plate, place a spoon of the nacho meat on top of the tortilla chips. Top with lettuce, chopped tomatoes, and black olives. Add a dollop of sour cream and some taco sauce if you desire. Makes about 9 large servings, or 18 snack-sized servings.

    You can refrigerate this and heat a spoonful of the taco meat in the microwave for about 2 minutes and then dip the tortillas as a snack anytime!

    I prefer not to put the tortillas under the meat before baking, because they get soggy. This way you can eat Nachos for a week and always have crispy, fresh tortillas.

    If you prefer to make less, you can use 1# of ground beef, 1 package of taco seasoning, 1 can of refried beans, and 1 can of cheese, and bake in a 8X8 pan.
