Baby Bleu Salad
4 oz. Field Greens
2 oz. Bleu Cheese
2 oz. Walnuts
2 oz. Mandarin Oranges
3 Strawberries
2 oz. Balsamic Vinaigrette Dressing

1 Tb Dijon-style Mustard
¼ c. Balsamic Vinegar
2 Tb Water
2 Tb Fresh Lemon Juice
¼ tsp Dried Leaf Tarragon
1 cl Garlic; minced
2 Tb Safflower Oil
2 Tb Virgin Olive Oil
Salt & Pepper to taste
Recipe
Place field greens on 10-inch plate. Top with Bleu cheese crumbles and candied walnuts. Place strawberry halves and mandarin orange wedges around the greens on the edge of the plate. Drizzle with dressing.
Balsamic Vinaigrette Dressing
In a jar - combine the mustard, vinegar, water, lemon juice, tarragon, and garlic. Shake well to combine. Add oils and shake again. Season with salt and pepper. Chill before serving.
