Beef & Pasta Salad
3 cups cooked farfalle (bowtie) pasta
2 cups zucchini, diced
2 cups tomato, diced
1/3 cup parsley, chopped
4 oz. lean deli roast beef, cut into strips
1/4 cup red wine vinegar
3 tbsp. beef broth
1 1/2 tbsp. olive oil
1 tbsp. honey mustard
salt & pepper
Recipe
Combine pasta and the next 4 ingredients (pasta thur roast beef) in a bowl; toss well. In a glass jar or bowl, combine vinegar and next 3 ingredients (vinegar thru mustard); whisk together. Pour dressing over pasta mixture; toss to coat. Salt & pepper to taste. Serves 4.
