    Black and Blue Chicken Salad

    12 cups spring mix
    1/2 cup crumbled bleu cheese
    1/2 and onion
    3 Roma tomatoes
    1 cucumber
    1 cup savory walnuts
    1 cup walnuts 1 Tbsp minced garlic 1 Tbsp shallots 2 Tbsp olive oil 2 Tbsp chopped parsley 1/2 tsp black pepper 1/2 Tsp salt 1/2 Tsp cayenne 1 Tbsp honey and a pinch dried thyme
    In a hot skillet toast walnuts for about 5 min. then add all ingredients except olive oil and honey toast for another 5 min. when toasted turn off and then add olive oil and honey and mix well then set aside to cool.
    Cajun spice
    1 Tbsp paprika
    1/2 Tbsp salt
    1/2 Tbsp black pepper
    1 tsp cayenne pepper
    1/2 Tbsp onion powder
    1 Tbsp granulated garlic powder
    1/2 Tbsp thyme
    1/2 Tbsp oregano

    Raspberry vinaigrette dressing
    1/2 cup vinegar
    1 tbsp raspberry purée
    2 tsp Dijon mustard
    1 tsp pepper
    1 tsp salt
    1 cup olive oil
    1 cup vegetable oil
    Mix all ingredients together except for oil then slowly add oil as you Vigorously whisk.
    Put chicken in the hot skillet pan and lightly dust with Cajun spice as you like
