    Carrot, raisin and apple salad

    1 lb bag carrots, shredded
    1 cup raisins, rehydrated
    1 apple
    1/2 cup Miracle Whip

    Recipe



    To rehydrate raisins, place raisins and 1 cup water
    in a bowl. Bring them to a boil in the microwave.
    Turn off microwave, but leave the bowl in it for
    half an hour (or while you're putting the rest of
    the salad together).
    Cut the apple into quarters. Core the sections.
    Slice the quarters into +/- 1/4" slices. Cut the
    slices into +/- 1/4" pieces.
    Combine all the ingredients in a bowl. Let the
    flavors meld in the fridge for a couple hours before
    serving.
    Note: To stop the salad from becoming watery, placing
    the shredded carrots in cheesecloth and squeezing the
    water out of them helps a lot.
