Corn Salad
4 cans white shoe peg corn, drained
1 large tomato, diced
1 large cucumber, diced
¼ - ½ purple onion, diced
½ bunch broccoli
2T mayonnaise (heaping to moist – or more to your taste)
Salt and pepper to taste
Combine ingredients. Refrigerate, serve cold. Great for parties! Serves 10.
