Frozen Fruit Salad
2 (3 oz.) pkg. cream cheese
1 cup mayonnaise
1 cup heavy cream, whipped
1 ( 30 oz.) can mixed fruit cocktail , drained
1/2 cup maraschino cherries, quartered
2 1/2 cup miniature marshmallows
Soften cream cheese, blend mayonnaise into cream cheese
Fold in marshmallows and fruit, then gently fold in the whipping cream
To give a light, delicate pink color, add 2-3 drops of red food coloring
Pour salad mixture into 1 quart round baking dish or freezer containers or loaf pan
Freeze firmly, about 6 hours or overnight
To: slice or cut pieces and serve on top of crisp lettuce leaves
Can also be served slightly softened by removing from freeze and place in refrigerator about 1 hour before serving
