    Grilled Salmon Caesar Salad

    List of Ingredients




    2 salmon fillets (1 pound each)
    3 cups cubed French bread
    1 Tbsp. Olive oil
    1/4 tsp. garlic powder
    1 bunch Romaine, torn
    2 cups small cherry tomatoes

    Dressing:
    3 Tbsp. Olive oil
    2 Tbsp. lemon juice
    4 1/2 tsp. Mayonnaise
    2 1/4 tsp. sugar
    2 garlic cloves, minced
    1/2 tsp. salt
    1/8 tsp. pepper
    1 Tbsp. grated Parmesan cheese

    Coat grill rack with nonstick cooking spray before startingthe grill. Place salmon, skin down on the grill. Grill covered,over medium-hot heat for 15-20 minutes or until fish flakes easily with a fork. Cool.

    For croutons, toss the bread cubes, oil, and garlic powder in a bowl. In a non stick skillet, saute the bread crumbs for 5-6 minutes or until golden brown, stirrinf occassionaly. Remove from heat and set aside.

    Flake salmon into chuncks. In a large bowl, combine romaine and tomatoes. In a small bowl, combine the oil, lemon juice, mayonnaise, sugar, garlic, salt, and pepper. Pour over salad and toss to coat. Add the salmon, croutons, and Parmesan cheese: toss gently.
    Serves 6.
