    Healthy Potato Salad

    Makes:

    5 servings

    4 red-skinned potatoes

    3 egg whites (hard boiled), diced

    3/4 cup red onions, diced

    1 cup celery, diced

    1 cup non/lowfat mayonnaise

    2 tablespoons mustard

    2 tablespoons relish

    1 teaspoon garlic powder

    1 tablespoon garlic, minced

    1 teaspoon ground black pepper

    Directions:

    Scrub and boil potatoes. Reduce heat and simmer for 25-30 minutes. Drain and refresh under cold running water. Drain and cut into small chunks and set aside in a large bowl.

    Add the egg whites, onions, celery, mayonnaise, mustard, relish, garlic, and pepper to potatoes. Stir well.
