Marinated Bean Salad

List of Ingredients
1 16 oz. can no salt added green beans, drained
1 16 oz. can yellow wax beans, drained
1 16 oz. can of Pinto Beans, drained and rinsed under cold water
1 19 oz. can of Cannellini Beans (white kidney beans)
1 C. chopped green pepper
1 C. chopped purple onion
1 t. minced garlic
3/4 C. white vinegar
1 t. vegetable oil
1/2 t. salt
1/2 t. freshly ground pepper
1/2 C. sugar
Curly lettuce leaves which is optional for presentation
Recipe
Combine first 7 ingredients in large bowl; set aside. Combine the
vinegar, oil, salt and pepper in small saucepan; bring to boil.
Remove from heat; stir in the sugar. Mix well till sugar is
dissolved. which won't take long. Pour dressing over vegetables;
toss gently. Cover and chill at least 3 hours, stir-ring
occasionally. To serve, spoon bean salad onto individual
lettuce-lined plates, if desired.
